May/June 2026 Newsletter – All About Fermentation

May/JUNE 2026 NEWSLETTER

This newsletter covers both May and June. I missed May because my partner and I were in England and Wales for over two weeks. One of the things on my bucket list has been to see the Chelsea Flower Show and we decided that this was the year to do it. The show is one of the best-known flower shows in the world.

Even though I had lived in London for 5 years, I had never been to see it. I am very happy we went but, truth to tell, it was a little disappointing. It was very crowded and commercial. Some of the designers had designed beautiful gardens, but nothing that I thought Wow! Incredible! In addition, people were standing three-deep around the displays and it was very hard to get to the front to see them. Some of the flower and plant vendor displays were beautiful, though.

However, “las pieces de resistance” were the flower displays outside the Show, in Sloane Square. Sloane Square is a very affluent area near to the show grounds. It has very high-end restaurants and shops. And many of the store fronts had magnificent displays of flowers and plants, often better than those inside the show. Although the Show was a bit disappointing, I am glad I have seen it. I learned about companion planting in pots, and a lot of other interesting plant related things that will help with my garden.

The rest of the time away, we spent visiting friends and family in London, Ross-on-Wye in the Wye Valley near the Welsh border, and then discovering southern Wales. We had spectacular weather, sunny and warm every day except one. I came back refreshed.

FERMENTATION

When we were in Ross-on-Wye, we went to a seminar on fermenting at the Hay-on-Wye Book Fair and this is what I want to talk about today. The person being interviewed was Dr. Tim Specter. He is a well-known professor of genetic epidemiology at King’s College London and in the forefront of gut biome research.

His latest book is called Ferment – The Life Changing Power of Microbes.

Listening to Dr Spector was inspiring. He talked about how eating fermented foods brought an astonishing range of health benefits including helping our digestion, creating microbial balance in our gut, improving our immune system, improving our mood, and lowering inflammation in our bodies.

Dr Spector stressed that the field is still in its infancy, but that the studies that had been done and that were on-going were providing information that was surprising him. For example, even dead microbes in pasteurized yogurt made a difference to the gut biome. He suggests that, for better gut health, we try to eat three fermented foods a day. They might include things like yogurt, kimchi, kombucha, miso, kefir and sauerkraut.

The book includes recipes for some of Dr Spector’s favorite ferments. I highly recommend it and have started trying to eat three fermented foods a day myself.

MORE ON CONSCIOUSNESS

On another note, I am always interested in consciousness and found a YouTube video which continues the discussion on plant consciousness. I accept this completely but, for those of you who are skeptical, here is link talking about how plants react to anesthetics.

Joey and His Friend Water

Have you had a chance to look at my children’s chapter book yet? Joey and His Friend Water explores the incredible ways everything around us is connected through energy – from people and plants, to rocks and water. The book brings to life the importance of the water cycle, mycelium, and trees, and even how water responds to words and emotions, reminding us all of our role in healing our planet.
